Rockmelon, Tomato & Feta salad (Serves 4)
3 tomatoes ½ cucumber ½ medium rockmelon freshly ground black pepper juice of 1 lemon |
1 tblsp olive oil 1 tblsp chopped chives 100g feta, cut into small pieces ¼ salad onion, finely chopped 12 black olives |
1. Wash and finely slice tomatoes and cucumber.
2. Quarter cantaloupe and remove skin. Cut each quarter into bite sized pieces.
3. In a bowl combine salt, pepper, lemon juice and olive oil. Mix in chives, feta, onion and olives.
4. Place the rockmelon in the centre of the serving platter and surround with alternative slices of tomato and cucumber. Spoon the dressing over the salad and serve.
