Lemon and Rosemary Marinated Veal Skewers

Lemon and Rosemary Marinated Veal Skewers (serves 4)

600g veal leg steaks, cut into 2 cm wide strips
1 lemon, juiced and rind finely grated
2 tablespoons chopped rosemary
1 teaspoon olive oil
2 teaspoons ground cumin
2 garlic cloves, crushed
    1. Soak 12 bamboo skewers in water.
    2. To make the lemon and rosemary marinade, place the lemon rind, juice , rosemary , olive oil, cumin, garlic, salt and pepper in a medium bowl.  Add veal and toss well.  Cover and place in fridge for 30 minutes to marinate.
    3. Thread about 3 pieces of veal onto each bamboo skewer.
    4. Cook on a hot preheated grill for 2-3 minutes each side or until just cooked.
    5. Serve with salads.
