Winter vegetables with garlic yoghurt sauce (serves 4)
400g new potatoes, boiled and cut in ½
Garlic yoghurt sauce
- Fill a large pot with cold water, add potatoes and bring to boil, after 8 minutes add the corn and after another 2 minutes add the carrots. After another 3 minutes add the zucchini, beans and broccolini.
- Cook for a further 3-5 minutes.
- Make the sauc e by whisking all ingredients together until smooth.
- Drain vegetables, serve with sauce and garnish with coriander.
