EAT SMART NUTRITION CONSULTANTS

RECIPES FROM HOLLY, KERRY, LAUREN, PETA, JOE & PEITA October 2009

Mushroom, Courgette and Tomato Salad (serves 4)

6 large mushrooms, sliced
4 tomatoes, skinned and quartered
1 bunch of cress, trimmed and divided into strips
½ cup semi dried tomatoes
4 courgettes, thinly sliced
1 tsp fresh basil, chopped

 CITRUS DRESSING:
100ml fresh orange juice
2 tbsp fresh lime juice
1 tbsp fresh lemon juice
1 tsp cider vinegar
½ tsp sugar and pepper to taste

  1. Combine the mushrooms, courgettes and tomatoes in a salad bowl and sprinkle with basil.
  2. Arrange the sprigs of cress around the edge of salad. Serve with Citrus Dressing.
