EAT SMART NUTRITION CONSULTANTS

‘IT’S WARMING UP’ RECIPES FROM HOLLY, KERRY, LAUREN, PETA, JOE & PEITA 24/08/09

White bean salad (serves 4)

200g mesculin or any lettuce of your choice
400g canned white beans, rinsed, drained
1 cup of mixed chopped fresh herbs of your choice (e.g. flat leaf parsley and tarragon)
1 carrot, cut into matchsticks
1 lebanese cucumber, cut into matchsticks
4 red radishes, trimmed, cut into matchsticks



4 tablespoons apple juice
2 tablespoons cider vinegar
2 tablespoons olive oil
2 tablespoons toasted sunflower seeds
2 tablespoons toasted pumpkin seeds (pepitas)


 

  1. Place mesculin/lettuce, bens, herbs, carrot, cucumber and radish in a bowl with combined juice, vinegar and oil; toss gently.
  2. Serve topped with seeds as a light meal, an entree, or a side dish to meat/poultry/fish.
