IRON RICH RECIPES

Many females (and some men!) suffer from low iron – here are some tasty ways to include more iron in the diet without having red meat

Tuna, bean & baby spinach salad (Serves 4)

125g green beans, trimmed
2 tblsp olive oil
1 tblsp lemon juice
½ tsp chopped thyme
400g can cannellini beans, rinsed & drained
425g can Italian style tuna in oil, drained
1 bag baby spinach leaves, washed

  1. Blanch the green beans in boiling water for 2 mins until tender and bright in colour.  Remove, drain and set aside.
  2. Heat a small saucepan over low heat.  Add the olive oil, lemon juice & thyme.  Stir for 2 mins until combined and warmed through.
  3. rrange the spinach on a serving platter. Layer with green and white beans & tuna.  Drizzle with dressing and serve.
