IRON RICH RECIPES
 FROM HOLLY, KERRY, LAUREN, PETA, PEITA & JOE

Many females (and some men!) suffer from low iron – here are some tasty ways to include more iron in the diet without having red meat

Marinated tofu and cashew stir-fry (Serves 4)

1 cup raw cashews
2 tblsp peanut oil
2 x 200g packets marinated tofu, cubed
1 onion, sliced
1 bunch asian greens, leaves separated, trimmed, washed
150g oyster mushrooms
1 red capsicum, cut into strips
1 carrot, cut into thin strips
½ cup oyster sauce
½ cup water




  1. Heat the wok on high heat, add raw cashews and toss until golden.  Remove.
  2. Heat 1 tblsp oil and toss marinated tofu strips until crisp.  Remove.
  3. Heat remaining oil, add onion and cook for 1 minute.  Add capsicum and carrot, cook for 1 minute. 
  4. Add asian greens and mushrooms and cook until just tender.  Return tofu and cashews.
  5. Combine water and oyster sauce.  Pour sauce in wok and stir through.
