Healthy Christmas Recipes 2009
Give your family a freinds a healthy treat this festive season!
Pumpkin Couscous Salad
800g butternut pumpkin, peeled, deseeded
- Cut pumpkin into 2cm cubes. Cook in a saucepan of boiling water until just tender. Drain.
- Heat 2 tbsp olive oil in a frying pan over medium heat. Add onion, cook for 2 mins. Add garlic, drained chickpeas, cumin and ground coriander, cook for 1 minute before adding pumpkin and toss together. Set aside.
- Place coucous in a heatproof bowl. Pour over stock. Cover with foil and stand for 2 minutes. Stir with a fork to fluff. Add pumpkin mixture, olives and coriander. Toss gently.
- Pour lemon juice over salad and serve.
