Healthy Christmas Recipes 2009
Give your family a freinds a healthy treat this festive season!

Pumpkin Couscous Salad

800g butternut pumpkin, peeled, deseeded
2 tbsp olive oil
1 red onion, halved, sliced
2 garlic cloves, crushed
2 tsp ground cumin
1 tsp ground coriander
1 ¾  cups couscous
1 ¾ cups vegetable stock, boiling
150g stuffed green olives
½ cup fresh coriander leaves, chopped
1 small can chickpeas
2 tbsp lemon juice



  1. Cut pumpkin into 2cm cubes. Cook in a saucepan of boiling water until just tender. Drain.
  2. Heat 2 tbsp olive oil in a frying pan over medium heat. Add onion, cook for 2 mins. Add garlic, drained chickpeas, cumin and ground coriander, cook for 1 minute before adding pumpkin and toss together. Set aside.
  3. Place coucous in a heatproof bowl. Pour over stock. Cover with foil and stand for 2 minutes. Stir with a fork to fluff. Add pumpkin mixture, olives and coriander. Toss gently.
  4. Pour lemon juice over salad and serve.
