Healthy Christmas Recipes 2009
Give your family a freinds a healthy treat this festive season!
Lemon and Lettuce, avocado and mango Salad
- To serve with your fresh Seafood or Leg Ham for Christmas Lunch
1 green oak lettuce, torn into small pieces
1 large avocado, diced
1 large mango, diced
2 tbsp slivered almonds, toasted
2 tbsp roughly chopped macadamias, toasted
2 tbsp dried cranberries
1 tbsp olive oil
1 tbsp white wine vinegar

- Combine lettuce, avocado, mango, nuts and cranberries in a bowl.
- Whisk oil and vinegar together in a jug. Season with salt and pepper. Pour over lettuce mixture and toss to combine. Serve immediately.
