Roast beetroot and walnut salad (serves 6-8)

8 medium beetroots, peeled and cut into 2cm pieces
1 tablespoon olive oil
150g walnut pieces, toasted
1 tablespoon lemon juice
¼ cup low-fat natural yoghurt
¼ teaspoon ground cumin
¼ teaspoon ground coriander
80g baby spinach leaves

1. Place the beetroot on a baking tray and drizzle evenly with olive oil. Roast in a hot oven, 200°C, for 1 hour or until tender
2. Toss the beetroot and walnuts in a bowl. In a small bowl, whisk together the lemon juice, yoghurt, cumin and coriander. Pour dressing over the beetroot and walnuts, and toss to combine.
3. To serve, divide the spinach leaves between serving plates and top with the beetroot and walnut mixture.

Layered pasta bake (serves 4-6)

2 red capsicums, sliced into 4
2 eggplants, sliced
2 sweet potatoes, sliced
400g can artichokes, drained/chopped
1 tablespoon olive oil
3 cloves garlic, finely chopped
2 leeks, sliced
2 x 415g canned diced tomatoes
415g can soy beans, drained/rinsed
1 cup tomato-based pasta sauce
1 tablespoon fresh basil, shredded
200g penne pasta, cooked and drained
100g low fat feta cheese, crumbled
100g reduced fat ricotta cheese

1. Place capsicum pieces, eggplant and sweet potato under grill. Cook for 3-5 minutes each side or until soft. Remove vegetables from grill and chop. Place in a bowl and stir in artichokes.
2. Heat oil in a medium saucepan. Add garlic and leek and sauté for 2-3 minutes. Add tomatoes, soy beans, tomato pasta sauce and basil. Stir to combine and mix through pasta.
3. Place half of the pasta mixture in a large casserole dish. Top with grilled vegetables then remaining pasta. Sprinkle with feta and ricotta and bake in a hot oven, 200°C, for 15 minutes.
Tip: You could vary the type of legume in this dish e.g. use cannellini beans, or for a non-vegetarian meal, add some chopped lean bacon or ham. You can vary the vegetables.
