IRON RICH RECIPES

Many females (and some men!) suffer from low iron – here are some tasty ways to include more iron in the diet without having red meat

Middle Eastern Lentil & Spinach soup (Serves 4)

1tblsp olive oil
1 large brown onion, coarsely chopped
2L vegetable stock
325g red split lentils
1 bunch English spinach, ends trimmed, washed & finely shredded
1 tblsp  garam marsala
3 tsp ground cumin

 

  1. Heat the oil in a large stock pot, over medium heat.  Add the onion and cook, stirring occasionally, for 5 minutes or until soft.  Add the water & stock cube.  Increase heat to high.  Bring to the boil.
  2. Add the lentils and stir until combined.  Reduce heat to medium and simmer, uncovered for 15 minutes or until lentils are tender.  Add the spinach and cook, stirring, for 3-4 mins or until spinach just wilts.  Add the spices and season to taste.
