IRON RICH RECIPES

Many females (and some men!) suffer from low iron – here are some tasty ways to include more iron in the diet without having red meat
Middle Eastern Lentil & Spinach soup (Serves 4)
1tblsp olive oil
- Heat the oil in a large stock pot, over medium heat. Add the onion and cook, stirring occasionally, for 5 minutes or until soft. Add the water & stock cube. Increase heat to high. Bring to the boil.
- Add the lentils and stir until combined. Reduce heat to medium and simmer, uncovered for 15 minutes or until lentils are tender. Add the spinach and cook, stirring, for 3-4 mins or until spinach just wilts. Add the spices and season to taste.
