Easter entertaining recipes for the long weekend!
Herb & lime marinated fish (Serves 6)
2 limes, rind finely grated, juiced
- Combine lime rind, ½ cup juice, oil and herbs with salt and pepper. Add fish and turn to coat. Refrigerate for 1 hour, turning once.
- Preheat a greased BBQ plate or large frying pan over medium-high heat. Cook fish, basting with marinade for 2-4 mins each side or until just cooked through.
