Easter entertaining recipes for the long weekend!
Easter Salad (Serves 6)
1 small broccoli, cut into florets
½ cup flat leaf parsley, finely chopped
- Blanch the broccoli in boiling water for 2-3 mins and the peas for 1-2 mins. Drain, refresh in cold water and drain again.
- Combine blanched vegetables, cucumber, avocado, sprouts & herbs. Whisk lemon juice & olive oil, season and toss through the salad.
- Top with fetta and seeds.
