Easter entertaining recipes for the long weekend!

Easter Salad (Serves 6)

1 small broccoli, cut into florets
100g sugar snap or snow peas, trimmed
2/3 cup frozen peas
½ telegraph cucumber, cut into large cubes
1 avocado, diced
150g mixed sprouts e.g. mungbeans, alfalfa, bean sprouts

½ cup flat leaf parsley, finely chopped
½ cup mint leaves, finely chopped
Juice of 2 lemons
100mL olive oil
3 tblsp mixed seeds, toasted
100g reduced fat fetta, cut into small cubes

  1. Blanch the broccoli in boiling water for 2-3 mins and the peas for 1-2 mins.  Drain, refresh in cold water and drain again.
  2. Combine blanched vegetables, cucumber, avocado, sprouts & herbs.  Whisk lemon juice & olive oil, season and toss through the salad.
  3. Top with fetta and seeds.
