LIGHT ‘N’ LOVELY RECIPES FROM

Chicken, Vegetable & Pasta Salad with Spicy Lime Dressing
Serves 2
| 5 sun dried tomatoes (not in oil)
2 X 125g chicken breast fillets, skinned and fat removed
1 ½ cups snow peas, halved
300g macaroni, cooked and drained
1 large carrot, thinly sliced
1 small red capsicum, chopped
3 cups sliced mushrooms
4 spring onions, chopped

Spicy Lime Dressing
1/3 cup lime juice
1/3 cup fat free mayonnaise
¼ cup sweet chilli sauce
1/3 cup chopped fresh coriander

- Combine dressing ingredients and set aside.
- Soak sun dried tomatoes in boiling water for 10 minutes, drain and slice.
- Slice chicken into 1.5cm slices. Steam or microwave chicken until cooked.
Drain and pat fry.
- Plunge snow peas in boiling water for a minute, and then plunge into iced water.
Drain and pat dry.
- Combine chicken with sun dried tomatoes, snow peas, macaroni, carrot, capsicum, mushrooms and spring onions.
- Pour the dressing over and mix gently to combine.
