Greek Style Village Salad
"a low fat take on a traditional Greek salad"
Serves 4
1 red onion, peeled, halved lengthways and thinly sliced
1 teaspoon capers, chopped
4 plum tomatoes, cut into chunks
1 garlic clove, peeled and crushed
1 teaspoon dried oregano
½ cucumber, roughly chopped
125g low fat cottage cheese
25g kalamata olives
freshly ground black pepper
2 teaspoons fresh oregano leaves – optional
1 tablespoon red wine vinegar

- Combine the onion, garlic, dried oregano, capers and vinegar and leave to marinate for at least 1 hour.
- Put tomatoes, cucumber and olives in a salad bowl and add the onion mixture.
- Add the cottage cheese, fresh oregano and plenty of pepper.
- Fold through and serve at once – this is a salad that does not keep.
- Great served with grilled lean lamb chops.
